Serves 2 Perp Time 4 minutes Cooking Time 35 minutes
GRAB: 2 medium-sized potatoes, scrubbed and cleaned. 2
tablespoons all-purpose cream. 3 tablespoons chopped shiitake mushrooms,
sautéed. 4 tablespoons goat cheese. salt pepper, and nutmeg to taste. 2
teaspoons grated parmesan cheese. Sour cream and chopped green onions for
garnish - optional
MAKE: 1-Boil potatoes just until tender. Set aside to cool.
2-Once slightly cool, slice potatoes in half lengthwise, Using a spoon, Scoop
out flesh. Reserve skins. 3-Perheat over to 400F. 4-Mash potatoes with a fork
until smooth. Add butter, cream, mushrooms, and goat cheese. Season with salt,
pepper, and nutmeg to taste. 5Top reserved skins with potatoes mixture.
Sprinkle grated Parmesan on top, then transfer to a baking sheet. 6-Bake for 5
to 8 minutes or until golden brown, Garnish with sour cream and chopped green
onions
