Carrot and Walnut Bars |
Makes 10 bars or more. Depending on size Prep time 20 minutes Baking time 15 minutes
GRAB: 1 cup self-rising flour, 1 cup all-purpose flour, 1
teaspoon ground nutmeg, 1/2 cups brown sugar, 1/2 cups brown sugar, 125 grams
butter, chopped, 1/4 cup grated carrot, 1/3 cup milk, 1/2 chopped walnuts, 1/3
cup vegetable oil, 1 egg, lightly beaten, 1 teaspoon baking soda, sifted,
confectioner's sugar for dusting - Optional
MAKE: 1 Preheat oven to 350 F. 2- Sift flours and nutmeg
into a large bowl, then stir in sugar and rub in butter with your fingertips.
3- Press 1/2 cups of the mixture firmly over the base of a greased 7x11-inch
pan. 4- Stir carrots and walnuts into remaining flour mixture, then stir in
combined milk, oil, egg, and baking soda. Pour mixture over prepared base and
bake in the preheated oven for 35 minutes until topping is set and golden
brown. Cool in pan. Dust with confectioner's sugar if desired, and cut it
squares to serve
