Salted duck egg salad

Serves 4

Salted duck egg salad ingredients: 2 and 1/2 tbs white vinegar. 1/4 cup (55g) caster sugar. 1 tsp sesame oil. 1 spring onion, thinly sliced. 2 cm piece of ginger, cut into thin matchsticks. 1 small red chilli, seeds removed, cut into thin matchsticks. 1/4 cup coriander leaves. 1/4 bunch Chinese celery, cut into 2cm pieces. 1 salted duck egg or 2 regular eggs, hard-boiled, peeled, quartered

Salted duck egg salad recipe: Place the vinegar, sugar and sesame oil in a small saucepan and bring to the boil, stirring to dissolve the sugar. Reduce heat to medium and simmer for a further 1 minute, then remove from heat and cool. Place remaining salad ingredients in a bowl and gently toss with the dressing
