Leftover sugar syrup will keep in the fridge for up to 1 month

Virgin pomegranate mojito ingredients: 1/2 cup (110g) caster sugar. 3/4 cup (185ml) lime juice (from about 4 limes). 150ml pomegranate juice (we used Pom). 1/2 bunch mint, leaves picked. 1 pomegranate, seeds remove. 1 lemon, thinly sliced. 3 cups loosely packed crushed ice. 3 cups (750ml) soda water

Virgin pomegranate mojito recipe: Place sugar and 1/2 cup (125ml) water in a small saucepan over medium heat, stirring to dissolve the sugar, then bring to the boil. Remove from heat and cool. Place lime and pomegranate juices, mint, pomegranate seeds, lemon and 100ml sugar syrup in a jug and muddle well. Add ice and top up with soda water. Stir well and serve immediately. By then, the virgin pomegranate mojito is ready
