Cheat's chocolate mousse ingredients: 250g dark chocolate. 600ml vanilla custard. 2 tbs brandy or Grand Marnier. 300ml thickened cream, plus extra to serve
Methods of cooking
To make cheat's chocolate mousse, Using a vegetable peeler, shave 50g dark chocolate and set aisde in the fridge until ready to serve. break up remaining 200g chocolate, then combine with the custard in a heatproof bowl set over a saucepan of simmering water (don't let the bowl touch the water), stirring until melted. Remove from the heat and cool slightly, then stir in the brandy and allow to cool completely. Beat the cream until soft peaks from, then fold into the cooled chocolate mixture. Divide mousse among six 200ml glasses or bowls and chill for 4 hours or until set. Beat the extra cream, if using, until soft peaks form, then serve the mousse, topped with cream and shaved chocolate. By then, the cheat's chocolate mousse is ready
