Lebanese Tabbouleh

Serves 4 as a side

Lebanese Tabbouleh ingredients: 1 tbs burghul. 2 bunches flat-leaf parsley, leaves finely chopped. 1/2 bunch mint, leaves finely chopped. 4 spring onions, chopped. 2 tomatoes, seeds removed, chopped. 1 Lebanese cucumber, chopped. 1/3 cup (80ml) each olive oil. 1/3 cup (80ml) lemon juice. Pomegranate seeds, to garnish

Lebanese Tabbouleh recipe: Soak burghul in hot water for 1 minutes, the drain. Squeeze out the liquid, transfer to a bowl and allow to cool. Add parsley, mint spring onion, tomato and cucumber, and stir gently to combine. Stir in oil and lemon juice, then season. Garnish with pomegranate seeds, to serve. By then,the Lebanese Tabbouleh is ready
