Jam Crostata recipe |
Serves 6-8
At Ombra, they make their own strawberry jam for this
crostata, but you could use any flavour of good-quality jam you like
Jam Crostata ingredients: 2 cups (300g) olain flour. 1 cup
(150g) incing sugar, plus extra to dust. 150g chilled unsalted butter, chopped.
2 egg yolks. 600g good-quality strawberry jam. Vanilla ice cream, to serve
Jam Crostata recipe: Whiz flour nd sugar with 1/2 tsp salt
in a food processor to combine. Add butter, and whiz until mixture resembles
fine crumbs. Add yolks and 1/4 cup (60ml) chilled water, the whiz until mixture
just comes together. Shape dough into 2 balls, then enclose in plastic wrap and
chill for 30 minutes. Preheat oven to 180C and grease a 25cm loose-bottomed
tart pan. Roll out 1 dough ball on a lightly floured board to 5mm thick, then
use to line the tart pan. Roll out the remaining dough to 5mm thick, then cut
into long, thin strips. Spread the jam in the tart shell, then top with pastry
strips in a criss cross pattern. Place tart on a baking tray and bake for 30-35
minutes until golden. Cool in the pan for 5 minutes, then dust with icing sugar
and serve warm with ice dream
