Pizza Bianca ingredients: 3 cups (450g) 00 or strong
(baker's) flour. 1/2 tsp caster sugar. 1 tsp dried instant yeast. 2 tbs extra
virgin olive oil, plus extra to serve. 2 x 150g balls flor di latte or 300g
bocconcini, chopped. 2 rosemary springs, leaves picked
Pizza Bianca recipe: Place the flour, sugar, yeast and olive
oil in an electric mixer fitted with a dough hook. Add 1 cup (250ml) lukewarm
water and mix on low speed for 2-3 minutes until combined. Increase speed to
medium and mix for a further 3-4 minutes until the dough is smooth. Transfer to
an oiled bowl, cover with plastic wrap and stand in a warm spot for 2-3 hours
until doubled in size. Preheat the oven to 220C. Punch the dough down, then
divide into 4 balls. In 2 batches, stretch each dough ball into a 22cm circle
on a lightly floured surface, then transfer to oiled baking trays. Scatter with
cheese and rosemary, then bake for 7-8 minutes until golden and cheese has
melted. Drizzle the pizzas with a little extra olive oil and serve immediately
