Steak and potato salad with pumpkin seeds |
This hearty salad combines warm ingredients with a leafy base
Serves 4
Steak and potato salad ingredients: Olive oil. 300g potatoes, boiled, sliced. 2tb dried oregano. 2 x 200g beef sirloin steaks. 1 large spring onion, thinly sliced. 200g green beans, blanched. Handful of mixed salad leaves. 5 radishes, thinly sliced
Pumpkin seed dressing: 2tbs pumpkin seeds (pepitas). 2tbs sherry vinegar. 1/3 cup (80ml) olive oil
Steak and potato salad with pumpkin seeds recipe: 1- Heat a splash of oil in a large frypan over medium-high heat. Carefully add the potato. followed by the oregano. Fry the potato slices, turning, for 12-15 minutes until crisp and golden. Remove and drain on paper towel. Season well while still warm. 2- Heat a chargrill pan or large non-stick frypan until searing hot. Season the steaks and cook to your liking. Leave to rest in a warm place for 10 minutes, then slice the steaks into strips. 3- Combine the potato, spring onion, beans, lettuce leaves and radish in a large serving bowl. 4- For the dressing, mix the ingredients in a small bowl or jar, then drizzle some over the salad. Serve salad with steak and the remaining dressing on the side. By then, the Steak and potato salad is ready
