Chocolate chunk brownies |
Makes 16 squares
Chocolate chunk brownies ingredients: 125g unsalted butter, chopped. 200g dark chocolate, finely chopped. 1 and 2/3 firmly packed cups (410g) brown sugar. 1 tsp vanilla extract. 2 egg, lightly beaten. 2/3 cup (100g) plain flour. 2 tbs cocoa powder, plus extra to dust
Methods of cooking
To make chocolate chunk brownies, Preheat the oven to 180C. Grease and line the base nad sides of an 18cm square cake pan with baking paper. Place the butter and half the chocolate in a heatproof bowl set over a saucepan of simmering water (don't let the bowl touch the water), stirring until melted. Remove from heat. Add the sugar and vanilla to the chocolate mixture and stir to combine. Stir in the eggs, then the flour and cocoa. Fold through the remaining 100g chocolate. Pour batter into the pan and bake for 35-40 minutes until firm to the touch but soft and gooey in the centre-the brownie will continue to cook as it cools. Cool completely in the pan. Dust with extra cocoa, then cut into squares to serve. By then, the chocolate chunk brownies is ready
