The multitude of hues and shades in this gratin is as
pleasing to the eyes as it is to the palate
Vegetable Gratin |
Serves 5 to 6 Prep Time 10 minutes Cooking Time 35 minutes
Vegetable Gratin ingredients: 2 tablespoons olive oil. 1
tablespoon minced garlic. 1 cup diced onions. 1/2 teaspoon dried thyme leaves.
Salt and pepper, to taste. 1 and 1/2 cups all-purpose cream. 2 eggs. 3 small
pieces zucchini, sliced into 1/4-inch thick rounds. 1 and 1/2 cups broccoli
florets, blanched. 1 cup grated mozzarella. 1/4 cup grated Parmesan cheese
Vegetable Gratin recipe: 1- Preheat oven to 350F. 2- In a
large sauté pan, heat olive oil. Sauté garlic and onions until translucent. Add
thyme season with salt and pepper. Remove from heat. 3- Stir in cream and eggs.
4- Alternately layer zucchini and broccoli with cream mixture individual
ramekins. Top with mozzarella and Parmesan cheese. 5- Place ramekins in a
baking pan half-filled with water. Bake in the preheated oven for 20 to 25
minutes or until vegetables are tender and tops are slightly browned
