discover how tasty and interesting couscous can be
| Tuna and Couscous Salad |
Serves 4 Perp time 30 minutes
Cooking Time 10 minutes
Tuna and Couscous Salad Ingredients: 1 and 2/3 water. Pinch
of saffron (optional). 1 teaspoon ground turmeric. 1/2 teaspoon ground cumin.
1/2 teaspoon ground coriander. 1/4 teaspoon ground cinnamon. 1 and 1/4 cups
couscous. 1 red bell pepper, roasted, skinned, seeded, and chopped into 1/2
finely chopped red onions. 1/3 chopped zucchini (unpeeled). 1/3 cup frozen
green peas, blanched. 1/4 cup raisins, rehydrated in 1/4 cup water. 1(180-gram)
can tuna chunks, drained. 1/3 cup lemon juice. 1/2 teaspoon grated lemon zest.
1/2 cup extra virgin olive oil. 1/4 cup chopped fresh cilantro. Salt and
pepper, to taste
Tuna and Couscous Salad recipe: 1- combine water and spices
in a small saucepan. Bring to a boil over high heat. 2- Place couscous in a
bowl. Pour flavored water over couscous and stir briefly. Cover bowl with
plastic wrap and let sit for 5 to 7 minutes. 2- Add vegetables, raisins, and
tuna. Toss with lemon juice, zest, olive, oil, and chopped cilantro. Season to
taste with salt and pepper. Cool and serve
Tip: The tuna and couscous salad can double as a side dish
with grilled lamb. Just omit the tuna and add more vegetables and dried fruits
in its place
