The trio of spinach, pear and meat with a combination made
in culinary heaven. Try adding caramelized walnuts or pecans to give it a
delightful crunch
Spinach and Pear Salad with Warm meat dressing |
Serves 4 Perp Time 20 minutes Cooking Time 10 minutes
Ingredients: 30 grams honey-cured meat, chopped. 1/2
tablespoon canola oil. 1 onion diced. 2 teaspoon mustard. 2 tablespoons vinegar. 2 teaspoons sugar. 1/2 teaspoon salt. 1.4 teaspoon ground pepper.
2 tablespoons chicken stock. 3 cups spinach, rinsed well and dried in a salad
spinner. 3 pears, seeded and sliced
Spinach and Pear Salad recipe: 1- cook the meat in a pan until
crisp. Drain well on paper towels. Reserve 2 tablespoon meat fat in the pan,
discard the rest. 2- Add canola oil to the meat fat Sauté onions and cook for
two minutes. Add mustard and vinegar let boil. Season with sugar, salt, and
ground peper. Add chopped meat and mix well. Keep warm. Taste mixture. If it's
a bit too sour and if the mustard flavor is too strong, add more chicken stock
as needed. 4- Lay spinach leaves on a platter. Arrange pear sliced on top, then
pour warm meat sauce all over. Serve immediately
