Reindeer Cookies ingredients: 250 grams butter, chopped, at
room temperature. 1 and 1/4 cups confectioner's sugar. 1 teaspoon vanilla
extract. 2 cups all-purpose flour. 1/2 cup rice flour. 1/3 cup cornstarch. 2
tablespoons milk. mini pretzels, chocolate chips, and jelly candies, to
decorate
Ingredients for the Icing: 1 pasteurized egg white. 1 and
1/2 cups confectioner's sugar sifted. 1 and 1/2 teaspoon milk. 1/2 teaspoon
vanilla extract
Reindeer Cookies recipe: 1- Preheat oven to 320F. Lightly
grease and line two baking sheets with parchment paper. 2- In the bowl of an
electric mixer fitted with the paddle attachment, beat butter, sugar and
vanilla until light and fluffy. Sift flours and cornstarch together. Fold into
mixture in two batches, along with milk. 3- Lightly knead dough on a lightly
floured surface until smooth. Divide mixture in two; roll into two flat dices
Wrap in plastic and chill for 1 hour. 4- Roll out dough between two sheets of
parchment paper until 1/8-inch-thick. Using a bell-shaped cookie cutter, cut
shapes from dough. Place on trays, spacing them an inch apart. Bake for 15 to
20 minutes until golden. Transfer to a wire rack to cool completely. 5- Make
the icing: In a small bowl, beat egg, white until foamy. Gradually add
confectioner's sugar, milk, and vanilla until smooth. Spread on each cookie. 6-
Turn cookies so bell shapes is upside down. Press two pretzels into the op
corners of each antlers. Use chocolate chips for reindeers' eyes and jelly
candies for noses. Store cookie in an airtight container
