Piri piri is an aromatic hot sauce with Portuguese origins.
Here, it is used as marinade to complement the sweetness of prawns. If a family
member is allergic to them, you may use chicken, beef, or lamb instead
Piri Piri Prawns |
Serves 4 Prep Time 20 minutes, plus marinating time Cooking
Time 6 minutes
Piri Piri Prawns ingredients: 1/3cup olive oil. 1/4 cup
cilantro leaves, plus extra to serve. 1/4 cup parsley leaves. 1 lemon, zest
grated and juiced. 8 bird's eye chilies. 4 cloves garlic, roughly chopped. 1
and 3/4-inch piece ginger, roughly chopped. 500 grams large prawns, peeled,
heads and tails left intact. Lemon wedges, to serve
Piri Piri Prawns recipe: 1- In a food processor, combine
oil, herb, lemon zest, lemon juice, chilies, garlic, and ginger. Process to a
smooth paste. Season to taste. 2- In a medium bowl, combine 1/4 cup paste with
prawns. Place remaining paste in a serving bowl. Marinate prawns for at least
30 minutes. 3- Thread 3 to 4 prawns onto 2 skewers (through head and tail), so
you can use skewers as handles to turn prawns. 4- Heat an oiled char-grill pan
or barbecue grill on medium. Cook prawns for 2 to 3 minutes each side, until
just cooked through, Brush with remaining sauce and sprinkle extra cilantro
leaves on top. Serve with lemon wedges on side
