Oriental Fruit Salad with Chicken |
Sweet fruits, savory chicken, crunchy veggies, and a
wonderfully tangy dressing make this salad an interesting mix of flavors and
textures

For the Chicken Fillets: 4 pieces chicken breast
fillets. Juice of 1 lemon. 1 teaspoon dried rosemary. 1 teaspoon dried basil
leaves. Salt and pepper, to season
For the dressing: 1 and half cups fresh green lemon
juice. 2 teaspoons honey. 2 tablespoons finely chopped cilantro. 1/4 cup extra
virgin oil. Salt, to taste. 2 water chestnuts (singkams), peeled and julienned.
3 oranges, segmented. 2 green apples, halved, seeded, and thinly sliced. 2
heads romaine lettuce, torn into bite-sized pieces. 2 hard-boiled eggs, sliced
into wedges. 6 wonton wrappers, sliced into strips and deep-fried
MAKE: prepare the chicken fillets: Marinate chicken breasts
fillet in lemon juice, dried herbs, salt and pepper. Let stand for at least 30
minutes. Cook on a grill pan for 10 to 12 minutes or bake in an oven preheated
to 350F for 15 to 20 minutes. Slice into strips and keep warm. 2- Make the
dressing: whisk together lemon juice, honey, and cilantro. Pour oil in a slow,
steady stream while whisking continuously. Season to taste with salt. 3- In a
bowl, mix together water chestnuts, oranges, green apple slices, lettuce and
hard-boiled eggs. Add grilled chicken breast and toss in dressing. Top with fried
wonton strips and serve immediately
