Mediterranean Pasta Salad recipe: 3/4 cup fresh plum tomatoes
seeded and chopped. 1/3 cup coarsely chopped sweet basil leaves. 2 tablespoon
capers, drained and rinsed. 10 to 12 pieces black olives drained and sliced
into rings. 2/3 cup artichoke hearts, drained well and sliced. 1 red bell
pepper, roasted, skinned, seeded, and sliced. 1(50-gram) can anchovies, drained
and mashed. 1/2 cup exta virgin olive oil. 2 tablespoons vinegar. 450
grams capellini or spaghetti noodles, cooked according to package directions
How to make Mediterranean Pasta Salad: 1- In a bowl, combine
tomatoes, basil, capers, olives, artichoke hearts, and red bell pepper. Let sit
for 15 to 20 minutes. 2- Add remaining ingredients to the Tomato-basil mixture;
toss well. Serve cold or at room temperature
