Ice Cream Cupcakes recipe and ingredients

Can't decide between an ice cream and a cupcake? Why not have both? Let the little ones design their own and give them away as kiddie party favors. This is one treat that won't melt

Ice Cream Cupcakes ingredients: 12 ice cream cones, preferably with flat bottoms. 2 8x6-inch disposable aluminum pans

Ingredients for the cupcake batter: 1/2 cup butter, softened. 2/3 cup sugar. 3 large eggs, slightly beaten. 1 teaspoon vanilla extract. Zest of one lemon (optional). 1 and 1/2 cups all-purpose flour. 1 and 1/2 teaspoons baking powder. 1/4 teaspoon salt. 1/4 cup milk

Ingredients for the frosting: 1 cup butter, softened. 4 cups sifted confectioner's sugar. 1 teaspoon vanilla extract. 2 tablespoons milk. Food coloring. Sprinkles for decorating

Ice Cream Cupcakes recipe: 1-Make a stand for the ice cream cones: Take a disposable aluminum pan and cut out 6 holes from the bottom. Each hole should be big enough for the second aluminum pan. Set aside. 2- Preheat oven to 350F. 3- Make the cupcake batter: In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until well combined. Add eggs, vanilla, and lemon zest (if using). 4- In another bowl, combine flour, baking powder, and salt. 5- Alternately add dry ingredients and milk to the creamed butter mixture, starting and ending with the dry ingredients. Make sure to scrape the sides and bottom of the bowl after each addition. 6- Using a teaspoon, fill ice cream cones with cupcake batter until three-fourths full. 7- Place aluminum pans upside down on a baking sheet. Place an ice cream cone in each hole. Bake in the preheated oven for 12 to 15 minutes or until a toothpick inserted in the middle comes out clean. Set aside to cool. 8- Make the frosting: Using an electric mixer, cream butter and confectioner's sugar together. Add vanilla and milk; beat until thoroughly combined. 9- Add a drop of food coloring and fold until well incorporated. If you want a darker hue, continue adding food coloring by the drop and mixing until desired color is achieved. 10- Using a piping bag fitted with a star tip, pipe frosting in swirls on top of cupcake cones. Decorate with sprinkles, if desired

Tip: To make frosting in different colors, divide frosting into several equal portions after step 8. Add a drop of food coloring in a different hue to each bowl and mix until well combined
