Vienna Almonds recipe and ingredients

These Vienna almonds are delicious when broken up used as a topping for ice cream or cakes. You can find whole vanilla beans at Gourdo's living well, Sweet craft and other baking supply stores

Makes 2 cups Prep Time 5 minutes
Cooking Time 30 minutes

Vienna Almonds ingredients: 250 grams whole almonds blanched then skinned. 1/2 cup caster sugar. 1/4 cup water. 1 vanilla bean, split. 2 teaspoons butter

Vienna Almonds recipe: 1- Preheat oven to 350F. Line a baking sheet with parchment paper. Arrange blanched almonds on baking tray, Bake for 10 to 15 minutes until light golden. 2- In a medium, heavy-bottomed saucepan, combine sugar, water and vanilla. Stir over medium heat until sugar dissolves. Bring to a boil. Cook without stirring for 8 to 12 minutes until just golden around the edges. Discard vanilla bean. 3- Add almonds to toffee with butter, gently stirring to coat. Pour onto tray. Use a wooden spoon to spread into a single layer. Set aside for at least 30 minutes. Break up nuts and store in an airtight container
