Francesca's special beef stew

Serves 4 to 6 Prep Time 30 minutes
Cooking Time 2 hours

Special beef stew ingredients: 1 and 1/2 kilos beef batok, cubed. 1/3 cup soy sauce. Juice from 6 pieces calamansi. 1/3 cup canola oil. 2 tablespoons minced garlic. 6 onions, sliced. 8 tomatoes, cubed. 1 and 1/2 cups grated carrots (around 2 to 3 pieces). 2 stems celery, finely chopped. 2 bay leaves. 1 and 1/2 tablespoons fish sauce. 1/2 cup tomato paste. 3/4 cup brown sugar. 2 cups water. brown rice and atsara, to serve

Special beef stew recipe: 1- Combine beef, soy sauce, and calamansi juice in a large bowl. Set aside and marinate for 30 to 45 minutes. 2- While waiting, heat a deep casserole with canola oil. Saute garlic, onions, tomatoes, carrots, celery, and bay leaves. Cook well. 3- Add fish sauce. Let evaporate, then add tomato paste and brown sugar. 4- Drain beef, reserving marinade. Add beef to the casserole and cook until the fat has been rendered. 5- Add water and reserved marinade. Let boil and simmer until beef is tender. Season with salt and ground pepper. Serve hot with brown rice and atsara on the side. If desired. By then, the special beef stew is ready
