Grilled scallops with anchovy, mint and coriander
Grilled scallops with anchovy, mint and coriander

Serves 6

Grilled scallops ingredients: 12 cleaned scallops with roe, shells reserved. 100g fresh breadcrumbs

Anchovy, mint and coriander dressing: 10 anchovies in oil. 1/2 cup chopped coriander leaves. 1/2 cup chopped mint leaves. 200ml canola oil. 1 tbs lime juice

Grilled scallops recipe: 1- Preheat the grill to high. For the dressing, blitz the anchovies, coriander and mint for 1 minute or until combined. Add the oil and lime juice, then blitz for a further 1 minute. 2- Place a scallop on each shell and add 1 tablespoon dressing to each. Arrange shells on a baking tray, then grill on the highest shelf for 3-4 minutes. Remove from the heat and sprinkle with breadcrumbs. Return to the grill, on a low shelf, for a further 2-3 minutes until golden. Serve immediately. By then, the grilled scallops is ready
