Cream of Broccoli recipe and ingredients

The humble broccoli is the star of this creamy, velvety soup. If you don't have broccoli, other vegetables such as carrot, pumpkin, or spinach will work just as well

Serve 4 Prep Time 10 minutes Cooking Time 20 minutes

Cream of Broccoli ingredients: 5 tablespoon butter, divided. 1 clove garlic, minced. 1 medium-sized onion, chopped. 1 Salk celery, chopped, 4 cups chicken stock. 4 cups chopped broccoli. 3 tablespoon flour. 2 cups milk. 1/2 cups grated quick melting cheese. Salt and pepper, to taste. Grated Parmesan Cheese and minced parsley, for garnish

Cream of Broccoli recipe: 1- In a pot, melt 2 tablespoons butter. Sauté garlic, onions, and celery until vegetables are tender. 2- Add chicken stock and broccoli. Cover and simmer for 10 minutes or until broccoli is tender. Remove from heat. 3- Transfer soup to a blender. Puree until smooth; set aside. 4- In the same pot, melt remaining butter and stir in flour. Cook for 2 minutes. Add milk and bring to a boil. Simmer until thick and bubbly. 5- Add purred soup and cheese. Stir until cheese is melted. Season with salt and pepper. Garnish with Parmesan Cheese and parsley. If desired
