Pita Pizzas |
Serves 4 to 6 Prep Time 2 hours (including bread-making and
baking) Cooking Time 15 to 20 minutes
Ingredients for the Pita bread: 2 teaspoons instant yeast. 1
tablespoon sugar. 1 and 1/4 cups water. 2 tablespoon olive oil. 400 grams bread
flour. 10 grams salt
Ingredients for the Pizza toppings: 2 tomatoes, sliced, 2
onions, thinly sliced. 4 to 5 basil leaves, sliced into thin strips. 1/4 cup
grated Parmesan cheese. Salt and pepper, to taste. 1/4 cup extra virgin olive
oil
Pita Pizzas recipe: 1- Make the pita bread: Combine all
ingredients in a large bowl. Knead for 12 to 15 minutes until smooth and
elastic. Let dough rest for 30 minutes or until double in size. Roll into a log
and divide into 14 to 15 pieces. Set aside and let it rest again for 30
minutes. 2- Place the baking sheet or tray you intend to use inside the oven.
Preheat oven to 450F. 3- Shape the dough by patting and pressing each piece
into a circular disc. Use a rolling pin, if needed, to get a very thin pita. 4-
Check if the baking sheet inside the oven is hot enough by sprinkling a little
water on it. If the water droplets sizzle once they hit the sheet, it's ready.
Carefully transfer the pita rounds to the sheet. Bake until dry but not brown,
around 5 to 7 minutes. No crust must form, so cover immediately with aluminum
foil Let cool. Set aside 4 pita rounds and freeze the rest for future use. 5-
Make the pizza: Place tomatoes, onions, and basil o top of the bread. Sprinkle
with cheese; season with salt and pepper. Drizzle with olive oil. 6- Bake in a
preheated 400F oven for 10 minutes or until golden brown. Serve immediately
