Marinated Feta: Want to give these marinated cubes of cheese
extra punch of flavor? Add a few springs of rosemary or thyme to the mix
Make 2 cups Prep Time 10 minutes, plus marinating time
Marinated Feta ingredients: 250 grams soft feta cheese. 2
bird's eye chilies. 2 garlic cloves, thickly sliced. 2 fresh bay leaves. 8 peppercorns.
extra virgin olive oil, to cover
Marinated Feta recipe: 1- Sterilize a wide- mouthed 500 ml
jar. Break feta into large chunk. Layer in jar with chilies, garlic, bay
leaves, and peppercorns. Pour over enough oil to cover, then seal. 2-
Refrigerate for 48 hours to allow flavors to develop. Store in the refrigerator
for up to 1 month
Christmas Salt: Here's a wonderful homemade gift that you
can prep in 10 minutes flat! Place them in small jars or tin containers, warp
'em up with some ribbon, and you're good to go

Christmas Salt ingredients: 1/4 cup dried thyme. 1
tablespoon finely grated orange zest. 1 tablespoon chili flakes. 2 cinnamon
sticks, crushed. 4 pieces star anise, crushed. 1 (200-gram) box sea salt
flakes, divided
Christmas Salt recipe: 1- In a food processor, combine
thyme, zest, chili, cinnamon, star anise, and 1/4 cup salt. 2- Transfer to a
large jar with remaining salt. Shake well. Use a funnel to pour into salable
jars. Store in the refrigerator for up 2 months
Tip: To sterilize jars, preheat oven to 212F. Wash jars and
lids in hot, soapy water. Rinse well. Place in saucepan. Cover with water,
bring to a boil, and boil for 10 minutes. Using tongs, transfer to baking tray
and place in preheated oven until dry
