Linzer Cookies ingredients: 2 and 1/4 cups grounds almonds.
1.2 cup cornstarch. 2 and 3/4 cups all-purpose flour. 1 and 1/2cup butter, softened.
1 cup sifted confectioner's sugar. 2 teaspoon salt. 1 egg. 1/3 cup
confectioner's sugar for dusting. 1 and 1/2 cups jam. We sued strawberry and
blackberry
Linzer Cookies recipe: 1- In a bowl, combine ground almonds.
Cornstarch and flour. Set aside. 2- In the bowl of an electric mixer fitted
with the paddle attachment, cream butter and confectioner's sugar until well
combined. Add vanilla, salt, and egg. 3- Lower mixer speed and gradually add
dry ingredients, making sure to scrape the bottom and sides of the bowl after
each addition. Beat until mixture is thoroughly combined. 4- Divide cookie
dough into 4 portions. Flatten each into a disc, wrap in plastic, and chill
overnight. 5- Preheat oven to 325F. 6- On a lightly floured surface, roll out
cookie dough until 1/2-inch thick. 7- Use cookie cutters to cut out different
shapes. Use smaller cookie cutter to make a cutout in the middle of the cookie.
Make sure every cookie left whole has a counterpart with a cutout center. 8-
Place cookies on a cookie sheet lined with parchment paper or a Slipat mat.
Bake for 8 to 10 minutes or until slightly brown. Place cookie sheets on a wire
rack to cool completely. 9- Dust confectioner's sugar over cookies with cutout
centers. 10- Spread 1/2 teaspoon of jam in the middle of a whole cookie and top
it with its counterpart. Repeat with remaining cookies Make about 2 dozen
Tip: Can't find ground almonds? Make your own! Using a
blender or coffee grinder, pulse blanches, peeled almonds a few times until
fine
