Making chahan or Japanese fried rice is a great way to use
up leftover rice. These flavor-packed bowls will have you asking for second

Serves 4 to 6 Prep Time 15 minutes

Ingredients for the chahan: 1/2 cup green peas. 1/2 medium
onion, minced. 1/2 cup diced carrots. 1/2 cup corn kernels. 1 clove of garlic,
minced. 1/2 teaspoon Japanese rice vinegar. 2 teaspoon honey. 3 tablespoons
mushroom soy sauce (or light soy sauce). 1 tablespoon sake (or mirin). oil for
Stir-frying. 1/2 cup diced meat (pastrami, Chicken, or sausage) 2 large eggs,
beaten. 4 cups cooked Japanese rice or day-old cooked rice that was stored in
the refrigerator
Ingredients for the Lapu-Lapu Teriyaki: 300 grams lapu-lapu
fillet, cut into medium-sized portions, Salt and pepper, to taste. 1 cup
store-bought teriyaki sauce (we used Kikkoman). 1/4 cup brown sugar. 1/4 cup
soy sauce. nori for garnish. microgreens, for garnish
Broiled Lapu-Lapu Teriyaki over Chahan recipe: 1- Make the
chahan: In a large bowl, mix together green peas, onions, carrots, and corn.
Set aside. 2- In another bowl, combine garlic, vinegar, honey, soy sauce, and
sake. Set aside. This will serve as the seasoning liquid. 3- Heat oil in a wok or
non-stick pan on medium heat. Stir-fry diced meat until cooked. 4- Add mixed vegetables.
Sauté until vegetables are cooked but not too tender or soggy. 5- Add eggs over
vegetables and scramble until they are cooked through. Add cooked rice; mix
with meat and vegetables. 6- While the pan is still very hot, use your spatula
to push some of the rice to the side. Deglaze the pan with the seasoning
liquid. Mix until well combined. Take off heat. Set aside and keep warm. 7-
Make the lapu-lapu teriyaki: Season lapu-lapu fillets with salt and pepper on
both sides. 8- In a small bowl, mix together teriyaki sauce, brown sugar, and
soy sauce. Brush both sides of the fish fillet with sauce. 9- Place fish
fillets on a baking sheet or try. Broil on high for about 4 to 6 minutes. 10-
Divide chahan among serving bowls. Place a fish fillet in each bowl. Garnish
with nori and microgreens
Tip: Don't have a broiler? You can bake the fish at 350F for
about 10 to 12 minutes, or pan-fry the fillets on a cast iron or non-stick pan.
Just make sure to brush the fish with the sauce again after baking or frying
